Smooth. A somewhat overused word in wine circles, but if the shoe fits... A softened tannin and mouth-filling oak profile underpin everything in this wine. This wine is a BFG, Big Friendly Giant. Sure it's weighty but gee whiz, it's got a heart of gold.

Why do we love this wine?

Rarely do you open wine when it’s in the perfect drinking window, but when you do, you really know about it. With almost a decade in the bottle, its tannins have softened to perfection. Robust and vibrant dark berries are still at the core, but the layers are opening up, offering roasted notes, cigar box, olive tapenade and mineral warmth. Cabernet sauvignon with perfectly aged, fine tannins is genuinely such a pleasure; it makes you wonder why we don’t always wait (nearly) ten years.

Frequently Asked Questions

After nearly a decade in bottle, this wine has reached that sweet spot where aggressive tannins have mellowed into silky elegance while the fruit remains vibrant. The extended ageing has allowed complex tertiary flavours like cigar box and olive tapenade to emerge alongside the core dark berry fruit. This transformation from youthful power to mature sophistication is what separates great Cabernet Sauvignon from ordinary examples.

Coonawarra's famous terra rossa soil - a thin strip of red earth over limestone - provides exceptional drainage and mineral complexity that Cabernet Sauvignon thrives in. The cool maritime climate ensures slow, even ripening that preserves natural acidity while developing intense flavours. This unique terroir combination produces Cabernets with both power and elegance, explaining why this wine has aged so gracefully and earned such high critical acclaim.

These savoury, spicy characteristics emerge through bottle ageing as the wine's tannins polymerise and integrate with fruit compounds. The tobacco notes often come from oak interaction combined with time, while allspice develops as the wine's natural phenolic compounds evolve. These tertiary flavours add layers of complexity that distinguish well-aged Cabernet from younger wines, creating the sophisticated palate profile that makes this 2017 so compelling now.

The wine's developed tannin structure and savoury complexity make it perfect for rich, umami-driven dishes like aged beef, lamb with herbs, or mature hard cheeses. The olive tapenade and mineral notes would beautifully complement Mediterranean flavours, while the roasted characteristics pair excellently with grilled meats. The wine's elegance and depth can handle bold flavours without being overwhelmed.

These exceptional scores reflect both the wine's individual quality and Devitt & Moore's reputation for crafting age-worthy Cabernets. A 95-point professional rating places this wine in the 'outstanding' category, while the strong Vivino score across all vintages suggests consistent quality from the producer. Such recognition from both critics and consumers indicates this is a serious wine that represents excellent value for its quality level.
