Why do we love this wine?

Full of oomph and bravado, this strapping back-vintage cab is not for the faint of heart. Packed with succulent, ripe berry fruits, charry and vanillin oak and leather – this is not one to pull the bat away from big, bold flavours. Marked by a toasty oak profile, there's a whack of tobacco, clove and freshly roasted coffee perfuming the nose and palate. This is quite the wine to impress.

Frequently Asked Questions

This wine has been carefully cellared and aged to reach optimal drinking condition, representing a back-vintage release that showcases how premium Coonawarra Cabernet Sauvignon develops complexity over time. Museum releases allow wine lovers to experience mature expressions that have had years to integrate their bold tannins and develop secondary flavours like leather and tobacco. At seven years of age, this wine demonstrates the exceptional aging potential that makes Coonawarra one of Australia's premier Cabernet regions.

The prominent charry, vanillin oak character comes from careful barrel selection and extended aging in quality French or American oak. Geoff Merrill's approach emphasises bold, structured wines that can handle substantial oak treatment without being overwhelmed. The toasty, coffee-like notes develop through the interaction between the wine's natural tannins and the oak's compounds over time, creating a complex marriage that's characteristic of premium Australian Cabernet Sauvignon designed for long-term cellaring.

This strapping Cabernet demands equally robust companions - think char-grilled ribeye, slow-braised lamb shanks, or aged hard cheeses like vintage cheddar. The wine's leather and tobacco notes complement game meats beautifully, while its berry fruit core can handle rich, tomato-based dishes like osso buco. The substantial tannin structure and oak influence make it perfect for cutting through fatty, protein-rich foods that might overwhelm lighter wines.

Coonawarra's famous terra rossa soil over limestone bedrock provides the perfect foundation for Cabernet Sauvignon, contributing to the wine's distinctive menthol and eucalyptus notes alongside its powerful blackcurrant fruit. The region's cool climate allows for extended ripening periods, developing the intense flavour concentration evident in this wine while maintaining the natural acidity needed to balance its full-bodied structure. This terroir expression is why Coonawarra Cabernet consistently ranks among Australia's finest.

A 95-point score from Wine Orbit places this wine in the 'outstanding' category, indicating exceptional quality that represents the top tier of Australian Cabernet Sauvignon. This rating reflects the wine's complexity, balance, and aging potential, suggesting it successfully combines power with finesse. Such high scores are reserved for wines that demonstrate clear varietal character, regional expression, and the technical skill to integrate bold elements like oak and tannins into a harmonious whole.
