If anyone ever asks you what Coonawarra Cabernet tastes like... hand them a glass of this - unmistakable! An exceptional showcase of time and place. This wine could only be from Coonawarra, only from 2021 and - if we're being real - only from Parker Estate. This wine will be drinking beautifully from right now until 2035 - to make a conservative estimate.

Why do we love this wine?

Sourced from Parker Estate's renowned ‘Abbey’ vineyard in southern Coonawarra - where the unique microclimate delivers a longer ripening season and the world-famous terra rossa soils make their mark on every single grape. The result? A tighter tannin structure, deeper fruit concentration, and serious cellar-worthy swagger. That said, this wine is drinking wonderfully already, at such a young age, and those who like their wines with a bit of grunt will find happiness in its graceful austerity. Or, if you're one for cellaring, dig a whole in the backyard, set you're alarm for 2035 and forget about it. The magic of stelvin-sealed bottle development will take care of the rest.

Woah! A faceplant into a tray of slow-roasted capsicum sets the scene with this new Abbey Vineyard Cabernet from Parker Estate. A rock solid Coonawarra Cabernet, it sees 40% new French oak barriques for 12 months. A curious fabric softener aroma ties itself to those varietal leafy Cabernet aromas, but they blow off soon enough. Blackberries come with the territory along with some boysenberries and mulberries. Bay leaf, dried thyme and sage add a fabulous herbal touch along with a fine shimmer of mint. It's a wine that dries out slowly but possesses a seductive 'come hither' call as it lures you closer. A mighty fine debut. Drink to eight years+

Frequently Asked Questions

Terra rossa is a distinctive red clay soil over limestone that's become synonymous with premium Australian Cabernet Sauvignon. This unique geological combination provides excellent drainage while retaining moisture, and the limestone base contributes crucial minerality that enhances the wine's structure. The iron-rich red clay gives Coonawarra Cabernets their characteristic intensity and helps develop those signature blackcurrant flavours with remarkable precision.

While this wine is already showing beautifully in its youth, Parker Estate's Abbey Vineyard Cabernet has the structure to reward patient cellaring until around 2035. The tight tannin structure and concentrated fruit will gradually integrate and develop secondary flavours of leather, tobacco, and earthy complexity. The screwcap closure ensures consistent bottle development without cork variation, making it an excellent candidate for long-term cellaring.

The wine's robust tannin structure and cedar-spice profile make it an ideal match for red meat dishes, particularly grilled or roasted lamb with rosemary, or a perfectly cooked ribeye steak. The blackcurrant intensity can handle rich, flavourful preparations like beef bourguignon or aged hard cheeses. The wine's 'graceful austerity' also pairs beautifully with game meats like venison, where its structured elegance won't overpower the delicate gamey flavours.

James Halliday's five red star rating represents the pinnacle of Australian winery recognition, awarded only to producers consistently making wines of exceptional quality. This rating system evaluates not just individual wines but the winery's overall performance, consistency, and reputation over time. Parker Estate's five star status places them among Australia's elite wine producers, indicating their commitment to excellence across their entire portfolio.

Single vineyard wines showcase the unique characteristics of one specific site, allowing the terroir to express itself without blending influences from other locations. Parker Estate's Abbey Vineyard has its own distinct microclimate in southern Coonawarra, with longer ripening seasons that develop more complex flavour compounds. This focused approach means every bottle captures the precise personality of this particular patch of terra rossa, creating a wine that's a true expression of place rather than a blend of different sites.
