Made by the grape master Matt Head (who you might also know from the cult favourite Big Easy Radio) whose creative and level-headed approach to life results in wines with spirit and soul. This parcel has been safeguarded under the Parous label, just waiting for its time and loving home to go to. It must be your lucky day mofo, because they've found it with you. It's powerful, but not overwhelming; the perfect choice to keep you entertained from weeknights to the weekend.

Wine Orbit

Wine Orbit

Opulent and richly expressed, the wine shows blackberry, game, warm spice and cedar characters on the nose. It's wonderfully weighted and generously textured in the mouth, offering excellent fruit intensity together with fleshy texture and beautifully infused tannins. Plush and highly enjoyable. At its best: now to 2034.

Frequently Asked Questions

Matt Head, the winemaker behind Parous, is also known for creating the cult favourite Big Easy Radio wines. His creative yet level-headed philosophy translates into wines that possess both power and finesse, avoiding the trap of over-extraction that can plague many full-bodied Shiraz. This balanced approach allows the McLaren Vale terroir to shine through while maintaining the wine's natural spirit and soul.

The 2019 vintage in McLaren Vale was exceptional, earning this wine recognition as a 'Killer Vintage'. This year provided ideal growing conditions that allowed Shiraz grapes to develop intense concentration while retaining natural acidity. The result is a wine that showcases the variety's signature black olive, plum, and spice characteristics with remarkable depth and aging potential.

The rich, spice-driven profile with black olive and plum notes makes this Shiraz perfect for hearty dishes like slow-cooked lamb with Mediterranean herbs, barbecued beef ribs, or aged hard cheeses. The wine's full body and structured tannins can stand up to bold flavours, while its spice elements complement dishes with pepper, rosemary, or paprika seasoning.

McLaren Vale's Mediterranean climate, combined with its diverse soil types ranging from sand to clay, creates perfect conditions for Shiraz cultivation. The region's proximity to the ocean moderates temperatures, allowing grapes to ripen slowly and develop complex flavour compounds. This terroir consistently produces Shiraz wines with the signature combination of power and elegance that this Parous bottling exemplifies.

Serve this full-bodied Shiraz at 16-18°C to allow its complex aromatics to fully express themselves. Decanting for 30-60 minutes will help soften the tannins and integrate the flavours. With its 95-point rating and structured profile, this wine has excellent cellaring potential and will continue developing complexity over the next 8-10 years when stored in cool, dark conditions.
