Why do we love this wine?

This wine truly shows the best of what the famed region has to offer, as it walks the tightrope between power and elegance with perfect poise. There are ripe dark fruits of plum and cassis, wrapped up in fine tannins and complimented by notes of toasty oak. It is intense, but also wonderfully balanced. We don’t need to say much about the ageing potential of cabernet with all that structure and tannin, but we will say that you’ll be glad it’s coming as a dozen.

Frequently Asked Questions

Coonawarra's famous terra rossa soil - a thin strip of red earth over limestone - creates ideal conditions for Cabernet Sauvignon. This unique terroir produces wines with exceptional structure and the distinctive eucalyptus character found in this Block C1, while the cool climate ensures the grapes retain natural acidity. The region's reputation for premium Cabernet is reflected in this wine's impressive 95-point ratings from multiple critics.

With its full-bodied structure, fine tannins, and excellent vintage conditions, this wine has serious ageing potential of 10-15 years or more. The 2020 vintage was particularly favourable in Coonawarra, producing wines with great concentration and balance. As it matures, expect the current dark fruit flavours to evolve into more complex secondary characters while the tannins soften and integrate beautifully.

Block designations indicate specific vineyard parcels that produce grapes with distinct characteristics due to factors like soil composition, drainage, and microclimate. School House has identified Block C1 as producing fruit worthy of single-block bottling, suggesting this particular section consistently delivers superior quality. This practice allows winemakers to showcase the unique expression of a specific site rather than blending across multiple vineyard areas.

Eucalyptus notes in Cabernet Sauvignon often come from compounds called eucalyptol, which can be absorbed by grape vines from nearby eucalyptus trees or developed naturally in certain terroirs. In Coonawarra, this characteristic is particularly prized and considered a regional signature that adds complexity without overwhelming the fruit. The eucalyptus complements rather than competes with the blackcurrant and meaty characters, creating a distinctly Australian expression of Cabernet.

The wine's robust tannin structure and meaty characteristics make it perfect for grilled red meats, particularly lamb with rosemary or beef steaks. The blackcurrant and eucalyptus flavours also pair beautifully with game meats like venison or kangaroo, while the oak integration allows it to complement rich, slow-cooked dishes like braised short ribs. The wine's intensity can stand up to strong flavours and rich sauces without being overwhelmed.
