Once a relatively unassuming estate at the sleepy southern end of the Yarra Valley's wine regions, Seville Estate now walks among the greats of Australian wine production.

Why do we love this wine?

Absolutely stunning. A knockout wine from head to toe. Aromatically enticing right out of the gate. The nose is freshly sweet, Turkish delight and winter strawberry with a confected, coulis style smashed berry mix. Creamy too - maybe a bit of Eaton Mess, all told. When this wine was first reviewed by Halliday there was mention of it being quite tightly wound, but that ball of energy has unfurled now and what remains is an inviting, generous, plush palate of red-fruited bliss. Peppy acidity gives zip and zeal to the juicy fruit - a brilliantly compiled wine that's looking just the part.

Frequently Asked Questions

This is part of Seville Estate's prestigious Single Vineyard Series, specifically from their Gembrook vineyard block. Single vineyard wines represent the purest expression of a specific site's terroir, capturing unique soil characteristics, microclimate, and elevation that distinguish it from blended estate wines. The Gembrook designation indicates this Pinot Noir showcases the distinct personality of one particular vineyard plot within Seville Estate's holdings.

The 94-point Halliday rating reflects this wine's exceptional evolution from a tightly wound young wine into a generous, expressive Pinot Noir. Halliday recognised the wine's initial potential, and now it demonstrates the classic aging trajectory of premium Yarra Valley Pinot Noir - developing from structured austerity to plush, red-fruited elegance. The combination of peppy acidity with generous fruit shows masterful winemaking that balances power with finesse.

The light-bodied, elegant profile with redcurrant and sour cherry flavours makes this wine incredibly food-friendly. Its bright acidity and red fruit character complement duck breast, salmon, mushroom risotto, or aged hard cheeses beautifully. The wine's Turkish delight and winter strawberry notes also pair surprisingly well with Middle Eastern spiced lamb or even dark chocolate desserts, while the peppy acidity cuts through rich, creamy sauces.

The 2021 vintage in Yarra Valley was marked by cooler conditions that favoured elegant, refined Pinot Noir styles. This vintage produced wines with excellent natural acidity and pure fruit expression, which explains this wine's 'peppy acidity' and vibrant red fruit profile. The cooler year allowed for extended ripening, developing complex aromatics like the Turkish delight notes while maintaining the fresh, zesty character that makes this wine so appealing now.

This wine is drinking beautifully now, having evolved from its initially tight structure into the generous, plush style described in current tastings. However, quality Yarra Valley Pinot Noir from respected producers like Seville Estate can develop additional complexity over 5-8 years. The wine's excellent acidity structure and single vineyard pedigree suggest it will reward patient cellaring, potentially developing more savoury, earthy characteristics while maintaining its core red fruit charm.
