Why do we love this wine?

This is the style of shiraz that made the world take notice of this ripper region. Simon 'Sorby' Adams is the master craftsman behind this wine (can you say, ex-head winemaker at Yalumba?), so it's no surprise that this is a seriously high calibre wine. Rich expressions of blackberry, plum, chocolate, spices and cedar from the use of 30% new French oak. After four years cellaring time, it’s drinking beautifully now, but has another decade of prime left in it for those patient types. This one is a bestseller for a reason, we invite you to find out for yourself.

Wine Orbit

"Gracefully rich and opulent, the enticing bouquet shows dark fruit intensity, cocoa, baking spice, and cedar characters. The palate is equally impressive with outstanding weight and richly textured mouthfeel, superbly complemented by layers of fine tannins. Sturdy and mouth-filling with a sustained, satisfying finish. At its best: 2038. 95 Points" - Wine Orbit

Ray Jordan

Ray Jordan

"Mighty good year in the Barossa was ’21, and this excellent shiraz shows all that you might expect from such a good season. There are notes of blackberry, cocoa, a little dark chocolate, and a nice ethereal cedary lift. The palate is seamlessly textured, quite plush with a liqueur cherry and slightly earthy savoury notes to offset. As with most of Adams’ wines, it gets a decent hit of oak, which in this case was 36 months in French. The result, though, is a harmoniously blended and composed wine that expresses the Barossa beautifully. 95 points" - Ray Jordan, Wine Pilot

Frequently Asked Questions

This wine represents the classic Barossa style that put the region on the world map, crafted by Simon 'Sorby' Adams, former head winemaker at the prestigious Yalumba estate. The combination of old vine fruit, 30% new French oak maturation, and four years of careful cellaring creates the rich, complex profile that Barossa is renowned for. The dual 95-point ratings from respected critics Ray Jordan and Wine Orbit confirm this is exceptional quality that showcases why Barossa Shiraz is considered among Australia's finest.

While this wine is drinking beautifully now after four years of cellaring, it has another decade of prime drinking ahead of it. The full-bodied structure, quality French oak integration, and concentrated Barossa fruit provide the backbone for extended ageing. Premium Barossa Shiraz like this typically develops greater complexity and tertiary flavours over 10-15 years, with the tannins softening and the oak becoming more integrated while maintaining the wine's power and intensity.

The rich blackberry, plum, and mocha flavours with cedar oak notes make this perfect for hearty red meat dishes like grilled lamb, beef steaks, or slow-cooked braised meats. The wine's full body and spice elements also complement game meats, aged cheeses, and dishes with earthy mushrooms or herbs. The chocolate and mocha notes even allow for pairing with dark chocolate desserts, showcasing the versatility that comes with well-made Barossa Shiraz.

The dual 95-point ratings reflect the exceptional winemaking pedigree of Simon Adams and the quality of Barossa old vine fruit. Critics recognise the perfect balance between power and elegance, with the 30% new French oak providing structure without overwhelming the fruit expression. The wine demonstrates classic Barossa characteristics while showing restraint and sophistication, plus the additional cellaring time has allowed all elements to integrate harmoniously, creating the complexity that critics value in premium Australian Shiraz.

Old vine Shiraz typically comes from vines that are 35+ years old, producing lower yields but more concentrated, complex fruit with deeper flavours and better natural balance. In the Barossa Valley, some Shiraz vines date back over 100 years, and these ancient vines develop extensive root systems that access different soil layers and minerals. This results in wines with greater depth, more nuanced tannin structure, and the ability to age gracefully - exactly what you find in this Reverend Canon bottling with its rich, layered profile.
