Why do we love this wine?

This is Prosecco Superiore DOCG, which is basically the region saying "no, really, this is the good stuff." The perlage is impossibly fine and persistent, the colour a brilliant straw yellow with a hint of green at the edge. On the nose it's elegant and lifted - white flowers, pineapple, exotic fruit and a bright thread of lemon zest running through it all. The palate is fresh, lively and moreish, finishing dry and savoury in a way that makes the next sip feel completely inevitable. Aperitivo hour, raw fish, a seafood spread, or frankly just a Tuesday that deserves a bit of elevation. This is the bottle.
