Why do we love this wine?

This draws on all the greatest components of premium Chablis: there is crushed oyster shell minerality at the fore, which leads into savoury cheesy funk, green apple, and ripe citrus notes. Fourchaume is one of Chablis' most celebrated Premier Cru sites, located on the right bank of the Serein River with optimal south-facing exposure. Unlike some warmer vintages that can lose Chablis' signature freshness, 2022 maintained the region's characteristic mineral precision while delivering riper citrus flavours. This balance makes it an ideal vintage for both immediate enjoyment and medium-term cellaring.

The wine's crushed oyster shell minerality and savoury funk make it a natural partner for shellfish, particularly grilled scallops or lobster thermidor. The full body and driving acidity also complement rich poultry dishes like roast chicken with herbs, or creamy fish preparations. The mineral backbone cuts through fatty fish like salmon, while the citrus notes enhance lighter seafood preparations.

While not essential, a brief 30-minute decant can help this full-bodied Chablis open up and reveal its complex layers of minerality and fruit. The wine's savoury elements and cheesy funk characteristics will become more pronounced with aeration. Alternatively, simply opening the bottle an hour before serving will achieve similar results, allowing the green apple and citrus notes to integrate beautifully.

Premier Cru Chablis from quality producers like Vocoret typically peak between 5-10 years from vintage, though this wine's driving acidity and mineral structure suggest excellent aging potential. The 2022's concentration and balance indicate it will develop honeyed complexity while retaining its fresh fruit character through 2030-2032. Store it in a cool, dark place at consistent temperature for optimal development.
