Why do we love this wine?

From the volcanic slopes of Mount Etna this is white wine humming with energy and personality. Grown in the mineral-rich soils of Castiglione di Sicilia, these vines soak up the sun by day and cool mountain air by night - perfect conditions for crafting something vibrant, tense and utterly delicious. On the nose, it’s all lemon zest, yellow apple, jasmine and a sprinkle of sea salt. The palate bursts with white peach, fresh herbs and bright acidity, finishing with a salty snap that keeps you coming back for another sip. It’s youthful, minerally and full of life - a true taste of Sicily’s coastline in one glass. Perfect with grilled fish, fried calamari or a big bowl of mussels.

Frequently Asked Questions

Mount Etna's volcanic soils create wines with exceptional minerality and tension that you simply can't find elsewhere in Sicily. The high altitude vineyards experience dramatic temperature swings between scorching days and cool nights, which preserves natural acidity while developing complex flavours. This unique terroir produces whites with a distinctive salty, mineral backbone that reflects the volcanic ash and pumice stone in the soil.

The salty finish comes from Sicily's coastal influence combined with Etna's mineral-rich volcanic soils. As sea breezes carry salt particles inland, they interact with the volcanic terroir to create wines with natural salinity. This saline quality is further enhanced by the indigenous grape varieties grown in these conditions, making it a perfect match for seafood dishes where the wine's salinity complements rather than competes with oceanic flavours.

Etna Bianco is predominantly made from Carricante, an indigenous Sicilian grape known for its bright acidity and mineral expression, often blended with Catarratto for added body and texture. These native varieties have adapted perfectly to the volcanic environment over centuries, developing unique characteristics that reflect the terroir. The combination creates wines with exceptional ageing potential and distinctive personality that showcases Sicily's winemaking heritage.

Serve this Etna Bianco well-chilled at 8-10°C to highlight its crisp acidity and mineral precision. The wine's textural style and bright character make it ideal for seafood pairings, particularly grilled fish or shellfish where its salinity creates harmonious flavour bridges. Consider decanting young volcanic whites like this one for 15-20 minutes to allow the mineral elements to open up and reveal their full complexity.

This 2023 vintage is drinking beautifully now, showcasing youthful energy and vibrant fruit flavours at their peak. However, quality Etna Bianco wines have excellent ageing potential due to their natural acidity and mineral structure, often developing more complex honeyed and nutty notes over 3-5 years. If you enjoy bright, energetic wines, drink it within the next two years, but don't hesitate to cellar a few bottles to experience how volcanic terroir evolves with time.
